Mušlárna gastro club is pleased to offer a monothematic gastronomic experience – a three-course menu – within the art premises of Nezvalova Archa. Fresh mussels from selected suppliers will be prepared for you by chef Roman Loubal.

STRAWBERRY PANNA COTTA
– strawberries, vanilla, pepper, balsamic, butter crumble.

Corporate gastronomic experience

About Roman, Mušlárna’s Head Chef

Roman was born in Olomouc in 1985. He studied culinary arts at the Secondary Vocational School and Secondary School of Edmund Husserl in Prostějov. Shortly after graduating, he worked for several years at the Borgo Agnese restaurant in Brno, including as head chef. After returning to his hometown of Olomouc, he led the Atmosphere restaurant in the Šantovka Gallery as head chef. Later, he moved to the Entrée restaurant, where he worked alongside Přemek Forejt.
One of his internships took place at Restaurant De Librije in the Netherlands (under the leadership of Jonnie Boer), which boasts three Michelin stars and ranks among the top 50 best restaurants in the world. His culinary dream came true five years ago when he was featured in the cookbook “The Best Chefs in the Czech Republic and Their Top Recipes”, published by TopLifeCzech.
He loves Italy and seafood. One thing led to another, and together with Marek Novotný, he created a unique experiential gastronomy concept at Nezvalova Archa.
